Moroccan-Spiced Vegetable Tagine

Looking for a quick, nourishing dinner that’s full of flavour and perfect for prepping ahead? This Moroccan-inspired veggie tagine is a comforting, plant-powered option to keep you fuelled through a busy week.

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 2 cups mixed vegetables (carrots, zucchini, eggplant)
  • 1 can chickpeas, rinsed and drained
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 1/2 cup dried apricots, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • 1/2 cup cooked couscous or quinoa for serving

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the onion, garlic, and ginger, sautéing until softened.
  2. Stir in cumin, coriander, cinnamon, and cayenne, cooking for 1-2 minutes until fragrant.
  3. Add mixed vegetables, chickpeas, diced tomatoes, vegetable broth, and dried apricots. Bring to a boil.
  4. Reduce heat, cover, and let simmer for ~40 minutes until vegetables are tender and flavours meld. Season with salt and pepper.
  5. Serve the tagine over cooked couscous or quinoa, garnished with fresh herbs.
