Smokey Homemade Baked Beans

There is nothing more gut-warming than a beautiful bowl of homemade smokey baked-beans for breakfast (lunch or dinner, for that matter!). This flavour-rich meal is easy to prep when friends come for brunch or simply when you are feeling the need for comfort or a fibre-boost.

Prep time: 5 minutes. Cook time: 15 minutes.

Ingredients

1 Tablespoon (20ml) extra virgin olive oil

1 small red onion, finely chopped

2 garlic cloves, crushed

1 tspn smoked paprika

1 teaspoon chili flakes (optional)

400g can diced tomatoes

½ cup cherry tomatoes, chopped

400g can cannellini beans, drained and rinsed well

400g can borlotti beans, drained and rinsed well

1 TBSPN salt reduced soy sauce

1 tspn brown sugar

1 tspn white vinegar

50g baby spinach leaves (1/2 bag)

40g goats cheese feta, crumbled

2 tablespoons parsley, chopped

4 slices dark rye sour dough bread, toasted

Method

  1. Heat olive oil in a pan over medium heat, then sauté garlic, onion, paprika and chili flakes for 2-3 minutes.
  2. Add the fresh and canned tomatoes to the pan, simmering on medium heat for 2-3 minutes.
  3. Add the beans and simmer the mixture for another 10 minutes.
  4. Stir through soy sauce, brown sugar, and vinegar. Season to taste.
  5. Add spinach leaves and stir through.
  6. Toast the bread and then drizzle each slice with extra virgin olive oil.
  7. Spoon the cooked mixture over toast, then serve with feta and chopped parsley on top.
