Healthy Vegetarian Pizza

Who doesn’t love pizza? Well now you can feel good about it too! This healthy homemade vegetarian pizza is light and tasty and delicious hot or cold. Serve with a side salad for added goodness.

Serves 4

Prep time: 10 minutes. Cook time: 20 minutes.


2 Tablespoons (40ml) extra virgin olive oil

4 whole grain wraps

1 cup reduced-fat tasty cheese, grated

1 eggplant, sliced

2 zucchinis, sliced

1 brown onion, chopped

1 cup semi-sundried tomatoes, chopped

½ cup Kalamata olives, pitted and chopped

1x 240g no-added-salt tomato paste


1. Preheat oven to 180°C on grill setting. Line baking tray with baking paper, place eggplant on top and drizzle with extra virgin olive oil. Grill eggplant for 15 minutes, or until eggplant starts to brown.

2. Line 2x baking trays with baking paper and lay the whole grain wraps on top. Spread tomato paste evenly on each wrap.

3. Place equal amounts of eggplant, zucchini, onion, tomatoes and olives evenly across each wrap. Then cover toppings with grated cheese.

4. Place trays in the oven at 200°C. Grill pizzas for 10-15 minutes, or until cheese has melted. Slice pizzas and serve.
