BarleyMax(TM) is a CSIRO developed grain that has a large number of different fibres, including those with prebiotic properties, which act as fuel to encourage growth and activity of beneficial bacteria in our gut.  It's not commercially available yet, but will be soon. In the meantime, you can use all wholemeal plain flour to boost fibre in these cookies for the kids:

INGREDIENTS

3/4 cup wholemeal plain flour

1/2 cup BarleyMax(TM) flour

1/3 cup dark chocolate chips (or cocao nibs)

1/2 cup desiccated coconut

1/2 teaspoon baking powder

1/3 cup brown sugar 

1 egg

3 tablespoons extra virgin olive oil (EVOO)

1/2 teaspoon vanilla extract

1 tablespoon water (if required to add moisture to mix)

 

METHOD

Stir together flour, choc chips, coconut, baking powder, sugar.

In a separate bowl, beat egg well.

Add oil and vanilla and mix to egg and stir until well combined.

Combine wet and dry ingredients and mix until just combined.

Chill in fridge for 30 mins.

Preheat oven to 190C (375F).

Use a dessert spoon to gather dough into 3cm balls.

Press each with a wet fork.

Bake until slightly brown (` 8- 10 mins).

Cool (if you can) prior to eating.
